Quinoa Chia Bites

 

Ingredients: 

Makes approximately 40 bites 

1. 3 cups of cooked quinoa cooled  

2..¾ c unsweetened cocoa powder 

3. ¾ c natural peanut butter or almond butter 

4. ¾ c maple syrup  

5. 3 tablespoons of chia seeds 

6. dash of salt (if no salt was added when cooking quinoa) 


Directions: 

  1. Combine all ingredients in mixing bowl and mix with a spoon.
  2. Line a baking sheet with parchment paper and coat with cooking spray. 
  3. Drop about a tablespoon of mixture on the baking sheet and leave a small amount of room between the bites. 
  4. Put the baking sheet in the freezer for at least one hour. 
  5. Remove bites from the baking sheet and store in an airtight container in the freezer.  


Tips: 

If using leftover quinoa, use within 3 days of it being cooked.  

Natural peanut butter or natural almond butter will work best due to being less solidified. 

These taste delicious when eaten directly out of the freezer.
